Pallet Bar & Grill is a wood-fired kitchen and bar on the Texas City bay side. We cook brisket over post oak, pull cold drafts from the wall, and keep the room loud late. No pretense. No foam. Just fire, salt, and time.
Built from reclaimed wood and stubborn hours.
We started in 2017 with a single oak-fired pit, two picnic tables, and a borrowed ice machine. Today the room seats 90, the bar pulls 24 drafts, and the pit still runs on post oak we split by hand every morning at five.
Pallet Bar & Grill sits in a converted freight warehouse two blocks off the Texas City dike. The name comes from the stack of salvaged shipping pallets we used to build the first bar — most of them still under the brass rail today, burn marks and all.
We cook the way the Gulf Coast taught us: low, slow, and with more patience than sense. Brisket goes on at dawn and rests for an hour before service. Ribs get a dry rub that's mostly pepper and salt — the way the old heads in Lockhart would recognize. The bar keeps a rotating wall of Texas-brewed drafts and a margarita that'll take the paint off a Chevy if you ask for the house tequila.
We're not fine dining. We're not a chain. We're the room you walk into after a long shift, order too much food, and stay longer than you planned. That's the deal.

Post oak splits burned down to embers before the meat ever touches the grate. No gas assist, no pellets, no shortcuts. Smoke is the only ingredient you can't buy.

Twenty-four drafts, all brewed inside state lines. From Houston lagers to Hill Country IPAs. Ask the bar — they'll pour you something you haven't had yet.
The room stays loud.
We're a bar first. The kitchen closes late, the jukebox plays loud, and the patio holds the overflow. Come for the brisket, stay for the third round.

We're on the bay side of Texas City, two blocks off the dike. Look for the smoke. Walk-ins welcome, reservations recommended for parties of six or more.
