Hoppes Cantina began as a single mesquite pit behind a converted feed store on Texas City's west side — one cook, one cooler, and a hand-painted sign that read "open when the smoke's right."
A decade later, the pit still runs before dawn and the sign still hangs crooked over the door. What's changed is the room around it: a long copper-trimmed bar, a dining hall that fills with neighbors by six, and a kitchen that treats the Gulf like a backyard — close, generous, and never far from a lime.
We don't chase trends. We chase the brisket that pulls clean at fourteen hours, the oysters that came in on this morning's truck, and the agave that rested long enough to remember where it came from.
