Hoppe’s is a Texas City institution — a mesquite-fired grill and bourbon bar where the ribeye comes off the flame at 1,200°F and the Gulf snapper lands on the pass the same morning it left the boat. No gimmicks. No shortcuts. Just fire, salt, and patience.
Three generations,
one fire.
Walter Hoppe lit the first mesquite fire on 6th Street in the spring of 1947, back when Texas City was still finding its legs after the war. He believed a steakhouse needed exactly three things: a hot fire, a steady hand, and a bartender who remembered your name.
Seventy-eight years on, the fire has not gone out once. Walter’s grandson Cal runs the line now, the mesquite still comes off the same Hill County ranch, and the bourbon wall has grown from a single shelf to forty-eight labels — but the rule hasn’t changed. If it can’t be cooked over fire, poured neat, or pulled from the Gulf that morning, it doesn’t belong on the Hoppe’s pass.
We dry-age every cut in-house for a minimum of 28 days. We crack black pepper by hand, finish steaks with smoked sea salt, and we will tell you exactly where your fish was landed. It’s the old way. It’s the only way we know.

A la carte dining
Walk in, take a booth, order off the full menu. The dining room seats 64 and the bar takes overflow — first come, first seated Tuesday through Sunday from 5pm.

The dining room hasn’t changed much since Walter’s day — same brick, same long mahogany bar, same open pit glowing at the back of the room. The bourbon wall is new. Everything else is older than you.

Hoppe’s is on 6th Street in Texas City, a short drive off I-45. We serve dinner Tuesday through Sunday, closed Mondays. Reservations are recommended for the dining room — the bar is always first come, first seated.
