Happy Donuts started with a single fryer, a hand-mixed dough recipe scribbled on a index card, and a simple idea: cut them by hand, fry them fresh, and have them ready before the sun comes up. Thirty-six years later, that index card is framed on the wall — and we still follow it every morning at 4 AM.
We're a small shop on the Gulf coast. No factory line, no freezer, no shortcuts. The raised dough proofs overnight, the cake donuts are mixed by hand each morning, and the kolaches come out of the oven just before we open the door. When we run out, we run out — that's how you know it's fresh.

The fryer goes on at 4 AM. By the time the door opens at 5:30, the case is full of donuts that were dough an hour ago. We don't reheat. We don't hold overnight. When they're gone, we make more — or we close early.
The raised dough recipe is the same one we started with in 1989 — written on an index card that's now framed above the mixer. Some things don't need improving. We just keep showing up at 4 AM to make them.
OpenWe're a small shop with a small kitchen and a big morning crowd. The case is fullest between 6 and 9 AM, and the maple bacon is usually gone by 10. Come early, come hungry, and if you want a dozen for the office — call ahead.
