We brought the block with us. The corner slice, the foldable crust, the attitude — all of it, packed up and re-planted on Grand Avenue in Bacliff, Texas.
Brooklyn Pizza started with a simple stubbornness: Texas deserved a real New York slice. Not a chain approximation, not a thick-crust compromise — the actual thing. The kind you fold in half and eat standing up on a sidewalk in Bensonhurst, grease running down your wrist, no napkin in sight.
So we built it. Long-fermented dough that rests 36 hours before it ever sees a peel. San Marzano-style sauce simmered low and slow. Whole-milk mozzarella, never the low-moisture pre-shredded stuff. A deck oven running hot enough to flash a crust in under seven minutes.
We're small on purpose. One location, one oven, one crew that actually cares whether your slice is right. The owner still greets you at the door, still asks how the pie was, still remembers your usual if you've been in twice. That's not a marketing line — that's just how a neighborhood pizza place is supposed to work.
