The Pass
We cook the way the bayou taught us — low, slow, and with intention.
Bayou Bistro and Bar began as a twelve-seat counter on the water in Bayou Vista, Texas. The idea was simple: take the Cajun and Creole cooking we grew up on, source from the boats and farms within an hour of the kitchen, and plate it without the fuss. Today the room seats sixty, but the philosophy hasn't moved.
Every dish on the menu passes through a single line. The redfish was swimming that morning. The andouille is made in-house every Tuesday. The bread arrives warm because we bake it through service. Nothing is plated until the table is ready for it.
The dish that put us on the map. A whole Gulf filet, hand-rubbed with our blackening spice, seared in a screaming cast-iron skillet, finished with a crawfish cream that drinks the char.
Cured for fourteen days, slow-smoked over Texas cypress, glazed with a pepper jelly we make from local peppers. Sliced thin, served over braised collards.
Skillet-baked to order, edges crisp from the iron, centre soft. Comes with honey butter, smoked salt, and a pickled okra relish that cuts the sweet.
A dark roux built over an hour, the trinity, house andouille, blue crab, and a stock we keep on the back burner all week. File powder on the side — your call.
