The Signature

Drag the handle.
Watch the dough turn.

Slide left to see the raw ball of cold-fermented dough. Slide right to see it the way it leaves our oven — leopard-spotted, blistered, and still crackling from the floor of a thousand-degree fire.

Our Story

A small oven.
A long wait.
A better slice.

We started with one stubborn idea — that a pizza worth eating begins the day before you eat it. Our dough cold-ferments for forty-eight hours before it ever sees the oven floor, which is exactly why it comes out with the kind of bubbles you can hear when you tear it.

The oven itself is a brick dome fired to a thousand degrees with hardwoods that smell like a Texas evening. A pizza walks in raw and walks out charred in under two minutes. That's not a trick. That's just heat doing what heat does when you let it run.

We're a short walk from the Nassau Bay waterfront and a longer one from anything you'd call a chain. Most nights the dining room smells of basil and burnt oak, the line is out the door, and the wait is worth it.

"We don't rush the dough. We don't rush the fire. We don't rush you. The slice gets here when it gets here, and it gets here right."

Why We're Different

Four things we don't compromise on.

Real Wood Fire

The oven burns hardwoods all day long. No gas, no electric deck — just heat, smoke, and a floor hot enough to blister a crust on contact.

48-Hour Dough

Cold-fermented for two full days before it's stretched. That's where the bubbles come from. That's where the flavor comes from. We don't skip it.

Made To Order

Nothing sits under a heat lamp. Nothing gets reheated. Your pizza is built the moment you order it and it leaves the oven the moment it's done.

Nassau Bay Local

Family-owned, on the same corner since we lit the oven. We know the regulars by name and we'd like to know yours too.
